COLLARD WRAPS
Serves 2
4 large collard green leaves, stem and rib removed (or your favorite grain-free wraps such as Siete or Trader Joe’s almond wraps)
1 to 2 tablespoons organic peanut butter or almond butter
Sliced mango, bell peppers or roasted sweet potato
Chicken, sliced turkey breast, or tofu
Fresh herbs: mint and Thai basil are favorites in this wrap
Lisa’s 1973 Cilantro Jalapeño, Thai Basil, or Hot Honey Lemon
HOW TO MAKE IT
Lay a collard green leaf or a grain-free wrap on your cutting board.
On the right side of the leaf, place a teaspoon of peanut butter.
Add your protein, mango, sweet potato and/or bell pepper, and fresh herbs.
Roll up the leaf or wrap and enjoy. Seal the leaf with a dab of peanut butter. Serve with a side of your favorite Lisa’s 1973.
